Zaw Purveyor Feature
Our ‘zaw wouldn’t be itself without the fruit or veggies atop each pie! The housemade sauces, creamy cheeses and juicy meats are definitely important ingredients, but a lot of the flavor is in the produce. We’re proud to be partnered with Tonnemaker Family Orchard in Royal City, Washington for many of our ‘zaw combinations involving fresh fruit or vegetables.
They grow more than 400 different varieties of fruit and vegetables in their 126-acre orchard. They’re all certified organic and some of the best we’ve ever tried – which is how their products make it onto our ‘zaw.
Not only are their products so clearly good quality, the family is dedicated to sustainability and local access to really good, organic food. “Our family believes that healthy, organic food should be priced within the reach of consumers. Resources are used in such a way that the land can continue to produce healthy food for generations to come.”
We use Tonnemaker’s organic asparagus, rhubarb, pears, apples, squash, pumpkins – often for our specialty pizzas, but also for our regular ‘zaws like the Pig ‘n Pear and Roasted Veg Head.
Tonnemaker plays a big part in our seasonal pizzas – particularly in the fall and winter. Their Honeycrisp apples are the star of the show on our Honeycrisp Harvest, with the freshly sliced apples, thick cut bacon, sauteed mushrooms, gorgonzola and mozzarella cheeses on a base of our housemade ruby red sauce. We also use their pumpkins to craft the roasted pumpkin puree on our Pumpkin Patch pizza in October and November. That ‘zaw has the puree and chunks of roasted pumpkin, plus mozzarella, caramelized onion, Italian sausage, and sage.
