A pizza is nothing without the herbs that bring out the complexities and flavors of each ingredient. Here at Zaw, where a pizza is so much more than just a pizza, the herbs pack a serious punch in the way of flavor. In order to stay true to our nature, we simply couldn’t settle for dried herb flakes. Let’s be honest, those herbs can hardly qualify — they’re a very far cry from the original, and typically taste like cardboard. There’s no way we’re putting that stuff on our artisan bake-at-home ‘zaw.

Instead, we found a local farm that grows some amazing fresh herbs: HerbCo. For about 25 years, HerbCo has been supplying businesses like Zaw with certified organic fresh herbs year-round. They hold the seat of several ‘firsts’ in herb farming, such as being the first in the Pacific Northwest to offer fresh herbs year round, the first in the region to implement a food safety program, the first in the whole country to use corn-based herb containers, and a lot more

HerbCo’s passion for quality and innovation is unquestionably clear, and that’s one of the reasons why we chose them as our purveyor for all of the fresh herbs in our ‘zaw: Basil, Oregano, Sage, and Thyme.

The fresh basil is a top feature of many of our pizzas, including the Arugula Patch, Cowardly Apricot, Marg & Rita, and Roasted Veg Head. Sink your teeth into the cheesy goodness of Formaggio the Fourth, which is perfectly complimented by a sprinkling of HerbCo’s fresh oregano. Thyme simply works with the mixture of mushrooms that top Shroom Fest, and we love the flavor combo of sage with the Sausage & Caramelized Onion ‘zaw.
