Zaw Purveyor Feature
When it comes to our Zaw, we want to be totally sure about the quality of the ingredients we use, from dough to the topping-est topping! So our purveyors are very important to us; farms and food crafters who are dedicated to sustainability in the industry, their customers, and of course the quality of their products.
Beaverton Mustards was our choice for classic Dijon! We needed a good mustard for the mixture we sometimes use to paint the crust of specialty Zaw creations. Beaverton knows how to do condiments, and they’re especially good at mustard.
The company was founded in 1929 by a wonderful woman named Rose Biggi. Her hard work helped her family survive the Great Depression, and afterward the business became the largest specialty condiment manufacturer in the U.S.

That’s a commitment that the team at Zaw can get behind and support, by using Beaverton dijon mustard on our pizzas.
While we often mix dijon with olive oil to paint some Zaw crusts with extra flavor, the Pig ‘N Pear is a pizza that always sports some Beaverton goodness. Its crust is painted with Beaverton Honey Dijon and extra virgin olive oil, then topped with fresh-sliced prosciutto and pears, then sprinkled with crumbled gorgonzola and shredded mozzarella.
Speaking of pear, we also use Beaverton’s dijon to make our handcrafted dijon vinaigrette to drizzle over the Perfect Pear Salad. Spring mixed greens are topped with fresh pear slices, crumbled gorgonzola and maple syrup candied walnuts tossed in lemon juice.
