Mushrooms are one of the best pizza toppings! They add a wonderful compliment to the flavors of ruby red sauce and creamy mozzarella, plus they balance out some of the more rich flavors from other classic pizza toppings. We decided to give mushrooms the spotlight with the Shroom Fest, with its gently sautéed portabella, button, and crimini mushrooms from Ostrom’s in Olympia. Roasted red onion gives this pizza a kick in the pants, and the addition of fresh thyme and garlic further enhances the delicious appeal of this Zaw. A blend of asiago and mozzarella complete the profile.
Sometimes cider is a better pairing than beer, and we felt this was the case with Shroom Fest. We picked the Atlas Semi-Sweet Apple Cider for its crisp, tartness with just the right amount of sweetness. For a good wine pairing, we recommend Airfield Estates’ Unoaked Chardonnay with its flavors of pear and lemon meringue, and smooth and well-balanced finish.
